专利说明:
The invention relates to a process for the production of beer, wherein the mashing a first container is carried out under heat and with stirring, and the mash thus produced is then purified in the same container, and then the wort boiling, the cooling of the wort, the Hot and cold separation and finally the fermentation is carried out. The production of beer in microbreweries and microbreweries is becoming increasingly important, as it is possible in this way to take special account of the craft aspects of manufacturing. In order to limit the costs in the production, the equipment cost must be kept as low as possible, whereas the efficiency in terms of high throughput has a little less importance. A minimization of the required repair is achieved in a solution as proposed in DE 10 2005 012 076 A. The mashing is carried out in a sieve, which is inserted in a container. The refining is carried out by pulling the sieve out of the container. It is obvious that the method and device are very simple, but are also not suitable for carrying out only average demanding brewing methods, since, for example, tipping is not intended at all. DE 10 2005 002 741 A discloses a small work with tower-shaped superimposed containers, which are installed in a single envelope. This allows a certain structural simplification, however, the individual process steps are carried out in a conventional manner in different containers. From WO 2009/017428 A a cylindroconical vessel is known, which is however intended for the fermentation process. The process of mashing and refining is not explicitly explained. Object of the present invention is to provide a method for the production of beer, on the one hand has the lowest possible demands on the required equipment, on the other hand, however, offers the possibility, all Process steps required or indicated for the production of highest quality beer. According to the invention this object is achieved in that is purified by the wort is withdrawn through a filter bottom of the first container. Thus, in the method according to the invention, the container in which the mashing is carried out can also be used for the process of refining. For the process of mashing, it is always necessary to mix the contents of the container by stirring. According to a particular embodiment of the method according to the invention, the mixing is carried out so that an agitator is moved in the mash, wherein a supernatant above the agitator is almost free of stirring. This makes it possible, in particular, for liquid to be passed from the supernatant backwards into the container during mashing, in which the thick mash is present. In addition to an improved circulation of the contents of the container, a more precise adjustment of the temperature of the wort is thereby possible, since the withdrawn liquid can be appropriately tempered in heat exchangers during mashing. The basic setting of the temperature of the mash via a heating zone, which is provided in the cylindrical part of the container wall. An additional advantage of this type of backwashing is that the lower part of the container, which is not covered by the actual movement of the agitator, is circulated accordingly. The refining is done by the wort is pulled down through the filter bottom and stored in an intermediate container. As in conventional methods, the spent grain cake deposited on the sieve of the filter base serves as the actual filter which retains the suspended solids from the wort. After refining, the tending takes place in typical processes, with further leaching of the tanning agents taking place by rinsing with hot water. According to a preferred variant of the method according to the invention, this is carried out so that the water is at least partially pumped from below through the filter cake. In this way, a loosening of the spent grain cake with water, which causes the ingredients can be leached with a smaller amount of water. A particular advantage consists in the fact that then the straightening can be done without mechanical help, for example by a Aufhackmaschine. The effects described above can be increased in particular by introducing inert gas through the filter cake together with the water. As a result, an additional loosening of the grain cake can be achieved. A further apparatus simplification can be achieved in that the wort is returned to the refilling after the refining in the first container and cooked there with the addition of hops. The first container assumes the function of the brewing pan. Cooking not only evaporates water, it also isomerizes and dissolves valuable components of the hop. This is important for the formation of color and aroma, the evaporation of unwanted flavors, the excretion of protein, the sterilization of the wort and the destruction of the enzymes. In particular, it is favorable if, after cooking, the hot trub separation and the cold trub separation are carried out combined in the first container. This is done by immediately starting to cool after cooking. The hot wort is sucked just below the wort level and cooled in an external cooler and returned from below into the container. After the wort has cooled, the pumping can be carried out in the fermentation vat, wherein the hot trub and the cooling trash are retained in the filter bottom. Alternatively, however, it is also possible that the fermentation is carried out in the first container. In this case, the hot trub and cooling trash are slurried and subsequently the yeast is added to the wort. In any case, it is possible in the application of the method according to the invention to make do without the otherwise necessary hot tub, in which typically takes place the Heißtrubabscheidung. The present invention also relates to an apparatus for producing beer, comprising a first container in which the mashing and the refining is carried out. According to the invention, this device is characterized in that the container has an upper cylindrical portion and a lower conical portion which is formed as a filter bottom. Essential to the present invention is the fact that a larger filter surface is available through the cone-shaped bottom part than in the case of a flat bottom. In addition, for example, the austrebern done by an opening at the top of the cone in a particularly favorable manner. The device according to the invention is particularly efficient in particular when the filter bottom makes up substantially the entire conical section. Preferably, at the lowest point of the conical portion a closable opening is provided for straightening. In a further consequence, the present invention will be explained in more detail with reference to the embodiments illustrated in the figures. Show it: Fig. 1 is a diagram of a system according to the invention; Fig. 2 is a detail of Fig. 1; and Fig. 3 shows an alternative embodiment of the invention in detail. The device according to the invention of Fig. 1 consists essentially of a cylindroconical container 1 with an upper cylindrical portion 2 and with a lower frusto-conical portion 3, which forms the filter bottom and which is composed of a jacket 4 and a lower end of the container 1 forming discharge opening 5 , The cylindrical portion 2 is surrounded at its periphery with a heating jacket 9, which is provided for heating, but also for cooling the contents of the container 1. Within the cylindrical portion 2, a rotor 6 is rotatably arranged, which serves to circulate the container contents. This rotor 6 is driven by a geared motor 7 at the top of the container 1. In the frusto-conical portion 3, a likewise frusto-conical screen 8 is provided, below which a screen space 10 is formed. In the following, the function of the device according to the invention will be explained in more detail. For mashing, the meal ground with a special mill is mixed with water in the ratio of 1: 2.5 to 1: 4 and introduced into the container 1. As a result, the soluble and most of the insoluble ingredients of the meal are enzymatically degraded and brought into solution. These degradation processes are controlled by the choice of temperature and exposure times. The required heat is supplied mainly via the heating jacket 9, which is supplied by a supply line 11 with a heating medium, such as hot water. The supply line 11 is connected to a multi-way valve 12, with which the various operating conditions can be controlled as needed. The heat input into the heating jacket 9 takes place in such a way that the supply line 11 is connected to a heat exchanger 13, which is also referred to as a cooker, which is supplied via a return line 14 with the cooled heating medium, whereby the heating circuit is closed. The circulation is driven by a variable speed pump P2. If the container contents are to be cooled, then the circuit is passed through a further heat exchanger 15, which is designed as a cooler. During the operation of the mash, the contents of the container 1 are gently circulated by the rotor 6, but the majority of this circulation is limited only to the middle height portion of the contents. Simultaneously or alternately with the stirring, a portion of the container contents is withdrawn through an upper opening 16 and conveyed via a pump PI to a lower opening 17 in the region of the discharge opening 5 and returned to the container 1. At the same time, inert gas, preferably carbon dioxide, is injected into the container 1 in a particularly preferred manner via a valve 18, as a result of which the mixing is additionally intensified. Another effect of the use of inert gas is that the fine components of the husks are driven upward in the manner of fluctuation and thereby do not mislead the spent grain cake. After mashing, the refining takes place, in which the components (wort) dissolved from the malt during mashing are separated from the insoluble components (spent grains) and the filter cake is leached out. Typically, this process is divided into two phases: prilling out the wort, where the concentrated wort is being purged, and puddling, where the leaching of the grain cake is done by adding water. It is a particular aspect of the present invention that the refining is carried out in the same container as the mashing. The clarification of the wort or Vorschießen is carried out by valves 19, 28 are opened in the discharge line 23, so that from the openings 21, 22 liquid can flow out of the screen room 10. It is important that the outflow of liquid from the container 1 by gravity does not occur by a suction of a pump. The open valves 19, 28 allow the formation of a free liquid level from which air can flow at the top. At the beginning of the refining the cloudy liquid is pumped back into the container 1 via valve 26, only when the liquid is clear, it is transferred from the container 1 in a buffer tank 30, which can be seen in Fig. 2. A water valve 29 selectively allows the addition of water, valve 28 is used to vent and to perform the CIP cleaning via a spray head 27th Tending is accomplished by adding water, which is then also passed down through the filter cake and peeled off. In conventional brewing processes, the hot water is added at the top. However, it is preferred in connection with the present invention for the water to be pressed completely or at least partially from below through the spent grain cake. As a result, a particularly good leaching can be achieved. The other conventional process steps of the production of beer, namely the wort boiling, the cooling of the wort, the hot and Kühltrubabscheidung can be carried out in the container 1 by the wort is returned to the container 1 after removal of the spent grains, or in a special fermentation tank, which is not shown here. Fig. 3 shows an alternative embodiment of the invention in which vertical filter elements are provided in the form of three radial plates extending from a common axial section. The screen space 10 is formed in the interior of the double plates. This makes it possible to further increase the filter area.
